Vernick Fish is our version of an American Oyster Bar. Ingredient-driven cooking, paired with a
love for global flavors results in an inventive menu of fish and shellfish dishes with a range
of vegetable preparations.
Taking a detailed, seasonal, and sustainable approach in small and large plate offerings, we aim to bring new life to the favorite hallmarks of oyster bar fare. We make a commitment to quality — whether we are buying stream, farmed, wild-caught or even preserved tinned fish — everything we use is the very best product we can source, handled in the very best way we can to bring forth authentic flavor.
Complementing the dining experience are well-crafted cocktails, and a focused wine list of seafood-friendly white and sparkling offerings, as well as light, fresh reds.
We are open for dinner service on Wednesday - Saturday from 6:00pm -
Our dinner menu is also available for takeaway, with all items made-to-order to coincide with your selected pick-up time.
In the Kitchen
Chef Greg Vernick
Born in Philadelphia and raised in Cherry Hill, NJ, Greg spent much of his childhood at his
grandfather’s butcher shop in Center City and at his mother's luncheonette near their hometown.
His first job working in a kitchen at the Jersey shore inspired him to pursue his own calling
for the restaurant industry. He went on to earn a degree in Hospitality Management from Boston
University followed by a culinary degree from the Culinary Institute of America (CIA) in Hyde
Park, New York.
After several years of working in Boston, New York, and then as a chef and chef-trainer with the Jean-Georges Vongerichten team around the country and overseas, he returned to Philadelphia to open his first restaurant Vernick Food & Drink in the Rittenhouse Square neighborhood of the city in 2012. He expanded his presence in Philadelphia thanks to the partnership with Four Seasons Philadelphia when Vernick Coffee Bar and Vernick Fish opened in 2018 and 2019 respectively within the hotel, and then added a Wine Shop & Chef’s Grocery next to Food & Drink shortly after.
After living in coastal places and visiting many throughout his life - pivotal years in Boston, love of the Jersey shore, travels to the Pacific Northwest, Italy and Spain – Greg’s passion for seafood resulted in conception of Vernick Fish, many years in the making.
Chef de Cuisine Drew Parassio
Born and raised in nearby Allentown, PA, our Chef de Cuisine, Drew Parassio, had the desire to cook from a very young age. He graduated from St. Joseph’s University in Philadelphia and studied in Rome and Italy's Amalfi Coast region. His first industry job upon returning to the States allowed him to learn process, supply and distribution at a family-owned bakery in New Jersey. In 2012, he joined Greg at Vernick Food & Drink as part of the opening team. He went on to become the restaurant’s first Chef de Cuisine. After six years working alongside Greg, Drew took the reins at Vernick Fish as Chef de Cuisine.
